How to Make Surprise Inside Chocolate Eggs

Surprise Inside Chocolate Eggs are a fun Easter basket idea that’s easier than you’d think, and such a fun way to make your own filled chocolate eggs at home!

When I was little, my mom used to make surprise-inside chocolate eggs for me every Easter.

She would wrap little toys in food-safe plastic bags (the kind we still sell in our store) and tuck them inside before sealing the chocolate egg halves together. On Easter morning, they would be sitting on the kitchen hutch waiting for me.

They felt magical. Like extra treasures the Easter Bunny left just for me.

Now I get to recreate and share that same feeling by showing you how to make your own break-apart surprise inside chocolate eggs and I love that they’re actually so simple to make.

You can hide little candies inside, add sprinkles on top, and customize them to match your Easter basket theme.

What You’ll Need to Make Surprise Inside Chocolate Eggs

Merckens chocolate melts (I used white, but any flavor works)

3D Medium Hollow Egg Candy Mold (or any 3D egg mold you’d like)

Silicone pastry brush

Disposable pastry bag

Cotton Tail Sprinkle Mix (or your favorite sprinkles)

Candies to hide inside

Frying pan

How to Make Break-Apart Surprise Inside Chocolate Eggs

Step 1: Paint the Chocolate Into the Mold

Melt your Merckens chocolate melts until smooth. See here for how to melt Merckens chocolate melts.

Using a silicone pastry brush, paint the melted chocolate inside your egg chocolate mold.

Place the mold in the refrigerator to set between layers. You’ll need to paint the chocolate on in multiple layers, I had to repeat this about three times to build up a strong shell.

Your goal is to create a coating thick enough that you can’t see light shining through the mold. That’s how you know it’s sturdy enough to hold your surprise.

 

Step 2: Release the Egg Halves

Once the chocolate is fully set, pop the halves out of the mold.

If they don’t release easily, just place the mold back in the refrigerator for a few more minutes. Fully set chocolate will release easily.


Step 3: Smooth the Edges

Heat a frying pan on a low setting.

Gently place the edge of one chocolate egg half onto the warm pan to remove excess chocolate and create a smooth edge. You’ll do the same thing with the next half just before sealing them together.


Step 4: Add the Surprise

Fill one half with your favorite candies.

I used Jelly beans, Sweet Tarts, and Mini chocolate eggs

You can also tuck in a small toy, just make sure it’s wrapped in a food-safe plastic poly bag first.


Step 5: Seal the Egg

To adhere the halves together, gently melt the edge of the empty half in the frying pan on low.

Place it directly on top of the filled half and press gently.

They’ll stick together, but you’ll notice a tiny gap along the seam, that’s completely normal.

Using a disposable piping bag, pipe a small amount of melted Merckens chocolate along the seam to fill it in.

Let it set.


Step 6: Decorate

Now for the fun part.

Drizzle melted Merckens over the top of the egg.

Sprinkle with our Cotton Tail Sprinkle Mix while the chocolate is still wet.

Let everything set completely before packaging or placing in baskets.

 

The last bite

These break-apart eggs are adorable in Easter baskets, as party favors, or even as table settings for Easter brunch.

But for me, they’ll always feel like that little moment from childhood where the special treasure filled eggs sat waiting for me and tapping the egg open to see what surprise was hidden inside.
